Been to a show lately and noticed any new desserts popping up at the bar? Our baked goods are carefully crafted and selected by themes and cultural significance to pair with each production by Goodman Bar Manager, Oonagh Kelly, along with our friends at Defloured–A Gluten Free Bakery.

We first partnered with Defloured—woman-owned bakery located in the Andersonville neighborhood of Chicago—in September 2023 with the Owen Theatre’s immersive production of LUCHA TEOTL, which treated audiences to Mexican chocolate brownies and cookies that joined our usual baked good selections. Our partnership expanded significantly at the end of December 2023, when Defloured became Goodman’s primary baked goods provider. In the last week of December alone, our bars sold over a thousand of Defloured’s gluten-free goodies during the closing days of A Christmas Carol.

In March 2024 when Artistic Director Susan Booth’s production of The Penelopiad hit the stage, the team at Defloured and Bar Manager Oonagh Kelly dreamed up tahini brownies and mediterranean love cakes for the show. This sweet treat was followed-up with Apple Pie Loaves and Maple Buttercream Blondies for Joe Turner’s Come and Gone, and “TB&J Bars” (tahini butter & jelly) for English. We’re thrilled to see how quickly patrons have embraced these new additions–weekly orders often exceed 300 items sold!
